Lemon Balm (Melissa officinalis) is a fragrant herb, known for its delightful lemon-citrus flavour with a subtle hint of mint. Its many uses include flavouring drinks like lemonade or infusing warm tea. In cooking, fresh or dried Lemon Balm leaves enhance the taste of fruit, sorbets, desserts, and serve as a pleasant garnish for fish, chicken, and vegetables. Lemon Balm also acts as an effective insect repellent.

Recognizable by its soft, green, fuzzy leaves, Lemon Balm reaches around 2' in height. Removing flower stalks encourages leaf growth and prevents self-seeding. To cultivate, sow seeds directly into moist soil in spring or summer after the frost risk has passed, and though slow to germinate, this evergreen perennial thrives once established.
